When an order is created or edited, there is the option to "Save as contact to address book" is available to be checked. However, once checked, it doesn't reset after the order is saved or cancelled. To reset it you need to remember to uncheck it on the next order you open/edit otherwise it begins overriding data in the address book even if it wasn't intended.
